i am still cooking lunch in the office regularly and almost all of the time it is steaming, since it's Christmas i thought maybe some roasts would be nice.. so i whacked up something what i called "A Merry Little Christmas Lunch", and look there, i have got myself roast chicken (yeah, that pile of unidentified dark stuffs on the left) with veggie, pasta and salad.. a very simple and experimental meal that i improvised on the limited ingredients and apparatus i have got in the pantry, not bad at all huh?? errr, please don't expect much from me lah, at least i was happy and think they taste good, hahaha.. :p
ooopss, sorry for the presentation!! chicken and veggie roasted in our little toaster oven, it worked well for the purpose.. the chicken was perfectly cooked, juicy and flavorful, because i was so kiasu i marinated it for two days, it tasted good actually, haha!! BTW, i am sure many bloggers out there would be able to tell me how can i make the skin crispy??
while roasting the chicken, i went back to work and 20 minutes later, i quickly cooked some pasta using the microwave and then topped with diced tomatoes seasoned with olive oil and mixed herbs.. that's it, but regret that i have forgotten about the bacon which could make the pasta taste even better..
there was still time left before the chicken was done, i got some cucumbers and drizzled sesame mayo on them.. i did not dice, slice or julienne the cucumbers, but instead peeled them into long thin strips like koay teow as i find the texture better this way and they actually look nicer too!! :)
From my one glance, all are so presentable and good. Thumbs up to you, SK! You are improving, you put Yannie to shame, as Yannie has forgotten how to cook already.
I went and made a cup of oat, then I put two bananas inside my oat and scooped the oat and bananas into my big mouth while reading your post again. This time I looked carefully what you cooked.
I like the cucumber slices very much. It must be very refreshing when eating this.
Your roasted chicken and veggies should be tasted good too, as you marinated for 2 days. Kiasu you like Singaporean only, oops! No offence ya!
How you cooked your pasta in microwave? Please share the instruction in detail. You cooked them by soaking in water and put inside microwave or you just cooked by putting dry pasta in the microwave? Please don't laugh, I really don't know how to cook pasta in microwave.
Yannie doesn't need to know how to cook dei, because you knew how to find a man who will cook for you!!! hehehehe~~ oh, those were for two person, myself and another colleague.. each one piece of the chicken, and one bowl of the pasta, and then share the cucumber..
my way of cooking pasta using microwave.. take hot water from the water dispenser, put in the pasta and then there goes salt and olive oil, chuck into microwave and ding for 4 minutes on high power.. when done, take out the pasta, put on the cover and "simmer" for another 1-2 minutes.. but i think this depends on what type of pasta you use and how hard/soft you like it, just for a reference here.. :)

I remembered got one year I'm very active in baking and cooking and as well as in blog-ing too. I roasted a whole chicken, mushroom soup with garlic bread. At the same time, I did made a yule log too. Arhhhh...so nice to be like those days.. "when I'm not lazy and busy me".
I did plan to bake gingerbread cookies and fruit cakes but keep procrastinating til next year 2016. Just hope 2016 will be pretty good to me. So I have time to explore more baking and also cooking lor.

Let's talk about food. Yum Yum! Photo #1 - Chicken & Vege Roasted For me, this platter is presentable. Maybe you can used kitchen towel to clean the side of the plate, then it looks much better. Do you realized, if you seen in TV; those chefs usually will do that, dish up the food on a plate and wipe off the side presented on the table.
Good tips sharing here, Angeline. May be SK couldn't find a clean kitchen towel that time. Toilet papers and tissue papers are not too hygiene to use to wipe the side of the plate.
I would suggest SK to wipe the side of the plate with his cute fingers and then tuck inside his own mouth, don't waste dei!
How to make the chicken skin crispy?. I will roast the chicken as usual until its cooked. Depends what kind of oven you used.
One option: For the oven has heat to select whether is upper, bottom and both, just turn to upper with the same degree you roasted the chicken for about 15mins or the colour turn golden brown. You must be very careful.. sometimes if the heat is even, it turn brown very fast.
two option: The manual way and it is risky. If the oven do not have the heat variable selection. Then once the chicken is cooked, try to shift the tray to one level upper, so is nearer to the heat. Must watch out or else.. jadi hitam manis. Ended is not crispy but is burnt!
three option: My idea, dunno it works or not. After you checked the chicken is cooked. Take out the chicken and apply a thin layer of honey over the skin and let it oven with the same degree heat, no need to adjust anything and roast for another 10mins or more or less... I think the honey will help to make the chicken skin crispy. Add nice flavor too.
hehehe, actually that plate was used to cooked the tomatoes in the microwave earlier.. i was lazy to get another new plate, also lazy to have to wash one more later, so i just grab that for my chicken lor.. yeah, should have at least wipe the plate a little so that it looks more presentable.. but aiyah, nvm lah, not restaurant mah, haha!!

How come your office food can be so nice, and mine is so cincai one argh? Basically we just have microwave here then nothing, not even the sink, if want to wash anything, got to bring it to the toilet to wash it (and that's outside of office one), the boss didn't prepare anything, if do so I might just gonna to bring my own, like so kesihan like that =.= Actually office one still okay la, got so many things, not very limit, still have lots of food can cook.

This Kewpie sesame mayo not only can use for salad, can be as a dipping sauce too. Fried chicken like chicken "karaage: drizzle a bit of the sauce on top... Yumz... Hungry now!

Your roasted chicken looks good leh. Yes, two days marination will give you the best infusion of flavours. In my case I very kiasi, scared that if I marinate too long, the chicken will go bad (no lah, it won't). I usually marinate overnight because I don't have two days to do it. What marinade did you use?
If you want the chicken skin to be crispy, you need to rub the chicken with some oil. Cooking oil, olive oil or any vegetable oil. Then you roast the chicken skin side down first. At half time (agak-agak) flip and roast it skin side up. The skin will become crispy but of course not as crispy as fried chicken.
I see that you also have roasted vegetables. Roasting the vegetables together with the chicken is very practical and the juices from the chicken will flavor the veggies.
Your pasta looks very attractive. It's the tri-color fusilli pasta which I like in pasta salads. Addition of the diced tomatoes, olive oil and mixed herbs makes it taste very good. Bacon would make it very sinful and so delicious! Next time, don't forget the bacon.
Was that the Kewpie roasted sesame dressing? I love that dressing a lot. Can really sapu a lot of salads with that dressing. Using the peeler to slice the cucumbers like that is very convenient and I agree that it actually looks nice. You can do that with carrots too. When I saw the first photo, I thought it was leeks hah..hah..
I see that you are really good in coming up with meals that can be whipped up in the office pantry using the toaster oven/microwave/steamer. Very inspiring lah. If someone like you can do all this in the office pantry, I don't see why anyone can't do it in their home kitchen.

i got soy sauce, olive oil, salt, pepper and sugar in the pantry, so just hantam all to marinate the chicken lor.. i also put in one small onion, and then i went back into the trash bag i was about to throw away the orange i just squashed the juice.. picked one and took the orange peel and threw them in, in the fridge and let it set for two days, muahahahaha!!

So you ate all the whole roast chicken by yourself. Where is mine Thambee??!! Tsk! Tsk! I read all the long winded comments and only one suggested honey coatings which is the best solution. Let me share with you what the chefs learnt from Europeans when presenting their annual roast turkeys or roasted chicken with thin crisp layer skins. They have a bottle which is called "Honey Spray". That is the trick.
ooh, so Santa Anay is going to steal a can of that "honey spray" from your in-law's kitchen and then give it to Thambee as Christmas present ke?? hehehehe~~ :p

I believe you are still cooking in the office as you mentioned you disliked going out to eat under the hot sun and traffic jam, which took a lot of your time away. And, moreover, I also remember you saying the price of the food like economic rice hike up. I guess the food that you cooked are even much better than those sold outside, unless it's restaurant or Michelin standard...hahaha.

And,finally some cucumber slices too! It must be very smooth and soft , from the way I look at it. How about the broccoli and small tomatoes that are missing from your meals this time round? hahha...
Anyway, the thin long slices cucumber doesn't look like cucumbers to me but rather some other veggies from the market. Probably it's long and in thin slices which looks like another type of veggies.
All in all, well done and keep up honing your culinary skills. Who knows, you will start to blog about cooking in the future as times goes by. And, your colleagues are the fortunate ones who can enjoy the healthy, simple but tasty meals!

I read all the long winded comments and only one suggested honey coatings which is the best solution. Let me share with you what the chefs learnt from Europeans when presenting their annual roast turkeys or roasted chicken with thin crisp layer skins. They have a bottle which is called "Honey Spray". That is the trick.
I saw this in my Swedish in-law's kitchen.
ooh, so Santa Anay is going to steal a can of that "honey spray" from your in-law's kitchen and then give it to Thambee as Christmas present ke?? hehehehe~~ :p

DeleteI believe you are still cooking in the office as you mentioned you disliked going out to eat under the hot sun and traffic jam, which took a lot of your time away. And, moreover, I also remember you saying the price of the food like economic rice hike up. I guess the food that you cooked are even much better than those sold outside, unless it's restaurant or Michelin standard...hahaha.
ReplyDeleteWah, I envy your colleagues! They always have home-cooked and healthy food to eat. Though, in the past, the food is simple but I guess health-conscious fellas especially ladies wouldn't mind.After all, they don't eat a lot!
And, this time round, it's more adventurous where you have a roasted chicken and marinated for 2 days! Must be very nicely done!
I can see the chicken looks good, though it's dark. Your picture didn't do justice to it. LOL. And, I like the idea that it is marinated for two days. Wow...imagine how flavorful it is! But then, would it too salty ? Aiya... a bit wasted. You should get a turkey and marinate it for two days, that sounds better right? Furthermore, it' Christmas time!

The pasta looks good too! Anyway, the portion is a bit too small for you or you purposely not to consume too much carbo? Again, you should brightens your photo a bit as it looks dark. Did you add some olive oil to it?
ReplyDeleteYeah, a bit wasted that you forgot to add in the extra ingredients like bacon to make it taste better. Well, it's always like that when you are cooking on the fly, unless you follow a strict recipe. Maybe next time?
And don't forgot the ham too! Bacon and ham alway coms together in pasta! :)

ReplyDeleteAnyway, the thin long slices cucumber doesn't look like cucumbers to me but rather some other veggies from the market. Probably it's long and in thin slices which looks like another type of veggies.
All in all, well done and keep up honing your culinary skills. Who knows, you will start to blog about cooking in the future as times goes by. And, your colleagues are the fortunate ones who can enjoy the healthy, simple but tasty meals!

Pretty soon can roast pork and make BBQ pork lor. Hmmm ...actually those two are more or less the same kungfu as the roast chicken leh.

what? Marinated for 2 days...lol...errr....paiseh...i wont laugh at you la as i did that too...5 days but in the freezer la. Coz after chopping everything i sumbat into freezer. When I wanna make roast chicken , just bring out , defrost and add some Olive oil then roast in the oven lo.
skin crispy ah...err....not sure...garam or oil kot? the ones i make the skin quite crispy...till j sapu all the skin...adui...this budak ah...
aiyak...lupa bacon in the pasta...err...too bad...next time must remember ah.
Interesting idea on making the cucumber like keoy teow. I wonder if you rendam the slices in salt water for a few minute might it not make it more crunchy to taste?
